The CTNS studies the physical and chemical characterization of food.
These studies enable us to understand the nutritional content of micro- and macronutrients and their physical and chemical parameters, and to provide valuable information about the quality and the nutritional profile of food.
They include:
- Determination of the composition and quantification of the protein fractions
- Determination of the composition and quantification of the lipid fraction
- Analysis and determination of the sugar, fibre and vitamin content
- Analysis and determination of substances and/or ingredients
- Determination of caloric content
- Study of the traceability of food components
