Nutritional characterization

The CTNS studies the physical and chemical characterization of food.

These studies enable us to understand the nutritional content of micro- and macronutrients and their physical and chemical parameters, and to provide valuable information about the quality and the nutritional profile of food.

They include:

  • Determination of the composition and quantification of the protein fractions
  • Determination of the composition and quantification of the lipid fraction
  • Analysis and determination of the sugar, fibre and vitamin content
  • Analysis and determination of substances and/or ingredients
  • Determination of caloric content
  • Study of the traceability of food components
